Dark, Soft Dinner Loaves


Ingredients:
1 cup warm water
1/2 cup orange juice
4 tablespoons unsalted butter, cut unto 6 pieces
1/2 cup honey
2 1/4 cups whole wheat flour
2 1/4 cups bread flour
1 3/4 teaspoons salt
3 tablespoons sugar
2 tablespoons Dutch-process cocoa powder
2 1/2 teaspoons instant yeast
Directions:
1. Combine all the ingredients and mix and knead until you have a soft , smooth dough. Form into a round ball and place in a greased container. Cover and let rise until almost doubled in bulk, about 1-2 hours.
2. Gently deflate the dough and transfer to a greased work surface. Divide the dough into 4 pieces and shape into little loaves. Place on a parchment lined baking sheet and cover to let rise, about 1 1/2-2 hours. They will not double in size.
3. Preheat oven to 350ºF. Uncover and bake the loaves until the bottoms are slightly browned or an instant-read thermometer reads 200ºF when inserted into the center of a loaf, about 25-30 minutes. Cool on a rack.
